Starbucks Lemon Pound Loaf (Bread Machine Recipe)

I am in love with Starbucks’ Lemon Pound Cake, and for good reason, it is the best I have ever had….until I made my own that is. After many adjustments to the recipe, I found the perfect combination for a rich, lemony, buttery pound cake in less than 2 hours.

Note: This recipe can be used with any bread machine. Please add the ingredients in the order they are written.

1/2 c. vegetable oil

3 tbsp. softened butter

3 eggs

1 tsp. vanilla extract

1 tsp. lemon extract

1/3 c. lemon juice

1/2 tsp. salt

1 c. sugar

1 1/2 c. flour

1/2 tsp. baking soda

1/2 tsp. baking powder

Add ingredients in the order listed, and select the setting for quick breads on your machine. While the loaf is baking, prepare the glaze.

Ingredients for glaze: 1 c. powdered sugar, 2 tbsp. milk, 1/2 tsp. lemon extract

Combine the ingredients and set aside. Once the loaf is finished, immediately add the glaze for a thin layer of sweetness, or wait until the loaf is cooled for a thicker, richer taste. Enjoy!
